Caramel Apple Slices
Caramel apples are a long-standing holiday treat. By just changing a few simple steps you can make, and store, these sweet munchies easily in your Canadian motorhome.
· 1 Cup of Butter
· 1 Cup of Corn Syrup, Light
· 2 Cups of Brown Sugar, packed
· 1 Can of Sweetened Condensed Milk (14 ounce size)
· 2 Teaspoons of Vanilla – The Real Stuff is Best
· 8 to 10 medium sized apples
· One Small Lemon or Lemon Juice
First cut the apples in half and remove the core, taking out the seeds and enough of the flesh to leave a small bowl. Place the apples in cold water with a few drops of lemon juice on top. The juice keeps the cut apples from turning brown.
Combine the butter, corn syrup, brown sugar and milk in a heavy-duty saucepan. Stir as the mixture comes to boil, using a medium-high heat. Continue to stir until the mixture is completely melted. It should be softer than the usual caramel used for caramel apples so that it flows easier. Remove the mixture from the heat, but don’t let it cool too much.
Put the halved apples on a plate or cookie sheet, hollowed-out side up. Pour the caramel into the apple “bowls” until each apple is full but not overflowing. Set apples aside and allow the caramel to cool.
Once the caramel in the apple bowls is cool enough to hold its shape, cut each bowl into slices. You’ll now have apple slices with the caramel on the inside. Enjoy while warm or let them set further for a chewier treat. What treats do you enjoy in your Alberta RV?
