Enjoy a taste of the tropics when out and about in your new Eldorado motorhome. Pair these heavenly Hawaiian pancakes with a mug of deep, rich Kona coffee for a true island treat.
Pineapple Macadamia Nut Pancakes
· 1 Cup pancake mix
· 1 Cup milk or water
· 1 Egg
· Small can pineapple tidbits - About 1/2 Cup
· 1/4 Cup of chopped macadamia nuts (more if you like crunchy pancakes)
Mix the pancake batter according to package directions and your personal preferences. For added flavour drain the juice from the can of pineapple and include it in the water or milk measurement. Once the batter is mixed fold in the pineapple bits and the chopped macadamia nuts.
Cook the pancakes on a griddle or in a heated frying pan on your RV or camp stove. Cooking temperature should be about 250C (400F). Sprinkle some water on the pan’s surface. If the water bounces before evaporating, the pan or griddle, it’s hot enough. Lightly grease the pan or griddle to keep pancakes from sticking. Cook pancakes according to the package directions. When the bubbles form on top of the cooking pancake, it’s time to turn it. Remove from heat and serve with coconut syrup.
· 1 Can Coconut Milk (13.5 oz)
· 2 Tablespoons Cornstarch
· 2 Cups Corn Syrup, Light
· 1/2 Cup Sugar, White
· 1/2 Cup Sweetened Coconut, Shredded
The syrup can be made at home before your trip or easily in your motorhome kitchen. Using a wisk, blend the cornstarch into the coconut milk in a saucepan over medium heat. Keep stirring until the cornstarch is completely dissolved. Then add the corn syrup, shredded coconut and the sugar, stirring all the while. When the syrup comes to a rapid boil, remove from the heat. Set aside to cool thoroughly. The syrup will thicken somewhat as it cools. Store the leftover syrup in your RV fridge. If you’ve made your syrup ahead of time, take it out of the fridge a few minutes before using so it flows more freely.
